Answer: The thin, watery layer is the Kefir Whey (which is rich in protein and minerals). If the separation is extreme or the Kefir tastes too sour or very fizzy, it indicates the cultures have been highly active (potentially over-fermented). If the Kefir is still within its expiration date, you can gently stir it to recombine the whey. While still safe, we recommend adjusting the flavour by blending it with sweet fruits.
